Recipe - Dinner on a fasting day (218 kcal)

Creamy zucchini soup

Ingredients:

2 medium zucchini, 500 g
1 medium onion
2 cloves of garlic
1 tsp olive oil
2 cups vegetable broth
2 tablespoons sour cream or coconut milk
some parsley


Salt and pepper to taste

Preparation:

Step 1: Dice the zucchini, peel the garlic and onions and cut into small pieces.

Step 2: Heat the olive oil in a pan and sauté the onions and garlic until translucent.

Step 3: Add the zucchini and sauté for another 2-3 minutes until slightly soft.

Step 4: Deglaze with vegetable stock and then simmer for 15-20 minutes.

Step 5: Puree the soup, add sour cream or coconut milk and season with salt and pepper to taste.

Step 6: Garnish with some parsley and serve.
