Recipe - Lunch on a fasting day (642 kcal)

Green vegetable salad with rice

Ingredients:

  • 1/2 cup brown rice (raw)
  • 1 cup water
  • 1/2 tsp salt
  • 2 tsp olive oil
  • 100 g tofu, cut into small cubes
  • 1 tbsp soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika powder
  • 1/4 tsp cumin
  • 2 cups green leafy vegetables, roughly chopped
  • (e.g. spinach, kale or chard)
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 1 tbsp chopped spring onion
  • 1 tbsp lemon juice
  • Salt and pepper to taste

    Preparation:

    Step 1: Wash the rice thoroughly and drain it. Bring the water and salt to a boil in a pot, add the rice, and simmer for about 20 minutes until tender. Drain the rice and set aside.

    Step 2: Heat 1 teaspoon of olive oil in a pan and fry the tofu until golden brown. Add the soy sauce, garlic powder, paprika, and cumin and mix everything together. Remove the tofu from the pan and set aside.

    Step 3: Place the green leafy vegetables, cucumbers, tomatoes, parsley, mint, and spring onions in a bowl. Add 1 teaspoon of olive oil and lemon juice and mix well.

    Step 4: Add the cooked rice and fried tofu to the bowl and mix gently. Season with salt and pepper, and enjoy.
