Quinoa salad

Ingredients:

50 g quinoa
2 medium tomatoes
1 medium avocado
1/2 medium red onion
1 tbsp lemon juice
2 tablespoons olive oil
1 tsp chopped fresh herbs, e.g. parsley and mint
salt and pepper

Preparation:

Step 1: Cook the quinoa in generously salted water according to the package instructions until tender. Drain and let cool.

Step 2: Meanwhile, cut the tomatoes into small cubes, the avocado into cubes and the onion into rings.

Step 3: Combine the cooled quinoa with the sliced ​​tomatoes, avocado, and onions. Add olive oil and lemon juice.
