Recipe - Summer salad with black cumin oil & wheat germ

Ingredients:

½ cucumber
1 avocado
10–12 cherry tomatoes, halved
1 small red onion, cut into fine rings
1 handful of arugula or lamb's lettuce
2 tbsp wheat germ Feinste Auslese – a source of spermidine
1 tbsp roasted sunflower seeds
2 tbsp fresh parsley or mint, chopped
2 tbsp pomegranate seeds (optional)

For the dressing:
2 tbsp organic cold-pressed black cumin oil
1 tbsp lemon juice
1 tbsp cloudy apple cider vinegar
1 tsp date syrup or honey
1 teaspoon Dijon mustard
Salt and freshly ground pepper to taste


2 servings I 20 minutes I approx. 280 kcal


Preparation:

Halve the cucumber lengthwise, remove the seeds, and thinly slice. Dice the avocado, halve the tomatoes, and finely slice the red onion.

Wash the arugula or lamb's lettuce thoroughly, spin it dry and place it in a large bowl along with the cucumber, avocado, tomatoes and onions.

In a small bowl, mix the dressing:
Mix organic cold-pressed black cumin oil , lemon juice, apple cider vinegar, date syrup, Dijon mustard, salt and pepper until you get a creamy dressing.

Pour the dressing over the salad and mix everything gently.

Finally, sprinkle with wheat germ , sunflower seeds, and fresh herbs. If desired, garnish with pomegranate seeds for a fruity touch.

Serve the salad immediately – fresh, aromatic and full of vital nutrients.
