Recipe - Dinner on a fasting day (209 kcal)
Tomato vegetable soup

Ingredients:
1 onion, chopped1 garlic clove, chopped
1 carrot, peeled and diced
1 stalk celery, diced
1 small can of chopped tomatoes (approx. 400 g)
1 tsp olive oil
2 cups vegetable broth
1 teaspoon dried oregano
Salt and pepper to taste

Preparation:
STEP 1 : Sauté the onion and garlic in a saucepan with 1 teaspoon of olive oil over medium heat until softened.
STEP 2 : Add the carrot and celery and sauté for another 5 minutes.
STEP 3 : Add the chopped tomatoes, vegetable stock and oregano and stir well.
STEP 4 : Bring to a boil and then simmer on low heat for 15-20 minutes until the vegetables are tender.
STEP 5 : Season with salt and pepper and serve. Enjoy.
