Summery quinoa vegetable grill with lemon and herb dressing

Ingredients:

1 small eggplant, sliced
1 small zucchini, sliced
1 red bell pepper, deseeded and cut into strips
1 yellow bell pepper, deseeded and cut into strips
1 small red onion, sliced ​​into thin rings
2 tablespoons olive oil
1 teaspoon paprika powder
1 teaspoon cumin
Salt and pepper to taste
200g quinoa
400 ml vegetable stock
Juice of one lemon
Fresh herbs such as parsley or coriander for garnishing

Preparation:

Step 1: Preheat the grill or oven to medium heat.

Step 2: In a bowl, mix the eggplant slices, zucchini slices, bell pepper strips and onion rings with olive oil, paprika powder, cumin, salt and pepper.

Step 3: Place the vegetables on the grill rack or a baking sheet and grill or bake for about 10-15 minutes, until tender and lightly browned. Turn the vegetables occasionally to ensure even browning.

Step 4: While the vegetables are cooking, cook the quinoa in the vegetable broth according to the package instructions until it is tender and has absorbed the water.

Step 5: Place the cooked quinoa in a large bowl and add the grilled vegetables.

Step 6: Drizzle the salad with lemon juice and mix well. You can also add some lemon zest for extra flavor.

Step 7: Season the salad with salt and pepper to taste and garnish with fresh herbs such as parsley or cilantro.

Step 8: Serve the grilled vegetables with quinoa as a light and filling main course or side dish.
